UE Bagels began with owners Emily and Mitch, whose appreciation for bagels grew from living and working in Canada. After returning to Australia during the COVID period, they started as Upwey Eats, a food truck travelling to markets and events and making deliveries during lockdowns. Their first shop opened in Varsity Lakes in November 2022, followed by Palm Beach in September 2023 and Miami in February 2025. The Miami café brings that same fresh-bagel focus to a newer Gold Coast neighbourhood setting, with a growing community of regulars.
