UE Bagels began with owners Emily and Mitch, whose appreciation for bagels grew while they were living and working in Canada. After returning to Australia during the pandemic, they started Upwey Eats as a food truck, travelling to markets and events and making deliveries. Their first shop opened in Varsity Lakes in November 2022, followed by the Palm Beach store in September 2023 and a Miami location in February 2025. The owners say the team starts making bagels in the early hours, continuing the hands-on approach that began with the food truck. For Palm Beach locals, the result is a dedicated bagel café with a clear origin story and a menu that works across breakfast, lunch and coffee breaks.
